I wanted to post my meals yesterday but it got a bit late. So here it is: I started with a cheese cracker, egg and salad with tomatoes and avocado, for lunch I had yoghurt with chia seeds, strawberry, coconut oil and shredded coconut. For dinner we had a large salad with grilled chicken thighs and a mayonnaise based dressing. After the picture I added some leftover avocado and had a mini icecream as dessert which I didn't plan. But that was my first cheat item in two weeks and my daughters really wanted to share their treats with the 4 of us. So I'm totally ok with it. Excuse my toes lol. ... This weekend I weighed in for my dietbet :) I lost 6.1% of my body #weight or 12.8lbs in 6 weeks! Im very proud of myself and also of Jesse, he lost 4% and a little over 10lbs himself :) My friends are all so good about being on each other's teams and helping one another. Sometimes it feels harder to fail than to succeed with such an amazing support system. I'm on track to lose 30lbs by my birthday and I'm really gunning to hit that goal. There's been a lot of chaos lately, losing my mom, then losing my job of 6 years, scrambling to start up school early, looking to move in with someone and it not working out, my father being my father, and my brother being in the hospital with a kidney stone. Just craziness. But I'm used to crazy. I think it'd be more unsettling to me if life wasn't at least a little nutty. ... I'm not particularly religious, but I feel #blessed. Give or take a few days:) I could have stopped when everyone was telling me “that was enough” “you look good now, don’t lose anymore” but I kept going and I’m glad I did! One thing I’ve noticed since dropping my weight is that I handle heat so much better now! It was HOT today and I could stand it🤷🏻‍♀️ before I would literally have to go inside because I just couldn’t bare the heat. My skin definitely swells In the heat but I can still handle it so much better now! I have my next DietBet starting August 25th! Share them with someone you love ❤️ Ingredients: Crust * 1/2 cup almond meal * 2 tbsp butter Cheesecake * 8 oz. cream cheese * 1 large egg * 1/2 tsp vanilla extract * 1/2 tsp lemon juice * 1 pinch salt * 1/4 cup sweetener of your choice Instructions: 1. Preheat the oven to 350°F. To make the crust, melt some butter until liquid and mix in your almond meal until you have some that feels like crumbly play dough. 2. Take about a teaspoon at a time and press the dough into the bottom of a muffin tin. Tip: line your pan with cupcake liners for easy removal. Cheesecake is very soft and if hard to scoop out without causing damage! Bake these crusts for about 5 minutes. They’ll come out slightly brown and crispy. 3. Then take your room temperature cream cheese and beat it with an electric hand mixer or standing mixer until creamy. Then add vanilla extract, lemon, an egg and your sugar substitute, erythritol in our case. Beat until all combined. 4. Use an ice cream scooper to fill all the crust-bottomed muffin tin cups evenly almost to the top (the mini cheesecakes will rise while in the oven but will flatten while refrigerating). You can also line each cup with a cupcake liner to make removing the mini cheesecakes easier. 5. Bake at 350°F for about 15 minutes. The mini cheesecakes should be slightly jiggly. Let them cool in the refrigerator for ideally 24 hours. But if you’re strapped for time, try putting them in the freezer for as long as you can. 6. Once the mini cheesecakes are done cooling, slide a knife around the edges of each muffin cup to loosen them up. Then use a fork and your hands to help them out cleanly. As a delicious bonus, slice up some strawberries and arrange them however you like on top of the mini cheesecakes. . 📸 plz dm me

One of the best meals I have had in a looong time. #Pierogies ~ #borscht ~ #crepes . . . I have finished my goals for this next year of life and enjoying food is definitely on it. I am over punishing myself by withholding food. . . . It’s taken me 15 months to find a balance of treats, healthy food and fitness. It’s still a struggle but I have come so far!! I now enjoy one treat everyday. My heart just can’t handle days on end without specific foods. . . . So here’s to a new year of life, new treat meals and many more healthy choices. . . . The rest of my goals below. 1) Be proud of my progress no matter where I am a year from now. 2) compete in a real race and win a medal even if it’s just a participation award. 3) Do a longer quiet time everyday and write a gratitude journal 4) win my dietbet and my HealthyWage and use winnings on a fantastic anniversary trip next May. 5) Fit into my wedding dress again 6) learn to love strength training and do it regularly-4 times a week.
