Celebrating 50k followers 🎊🎉 with my number one favorite fudge brownie recipe 🍫 So happy for each one of you here - hope to keep you here for long time 🙏🏻❤️ . . FOR THE CAKE (makes 8 servings) 6 fresh dates 0.5 cup coconut sugar 0.5 cup sweet potato 0.5 cup coconut flour 4 tbsp coconut oil 1/2 tsp salt 1 cup cacao powder 0.5 cup almond milk 1/2 tsp salt 4 tbsp flax egg (mix 1 cup water + 4 tbsp flax seeds. Take 4 tbsp of the liquid to the cake) . . FOR THE FROSTING 100g vegan chocolate 4 tbsp coconut cream METHOD: Preheat the oven 175 degrees celsius Cut the sweet potato into cubes and boil until softens. Let the sweet potato rest for about 10 minutes. Mix the sweet potato and the rest of the ingredients in a food processor until combined. Pour the batter into a mold and heat in the oven for 25 minutes. Start making the frosting by melting 100g vegan chocolate and add the coconut cream. Pour over the cake and refridgerate for 1 hour before serving. . . . #sugarfree

Did you know adding one 1 tsp ceylon cinnamon helps regulating the blood sugar when eating something carby/sugary? How great? 👌🏻 . . For the cinnamon cookie crumble (makes 2 small ones) 1/4 cup gluten-free oat flour 2 tbsp peanut butter 2 ml ceylon cinnamon @organicburst 4 fresh dates Mix the Ingredients in a bowl and shape cookies. Bake in the oven for 10-12 minutes (200 degrees celsius) . . For the pumpkin pie mousse 200ml coconut milk (thick part of a can) 90g butternut pumpkin 1 tsp ceylon cinnamon @organicburst 1/4 tsp ginger 1/4 tsp clove 1 tsp vanilla extract 1/4 cup maple syrup . 1. Start with cooking the pumpkin in the oven for about 30 minutes (200 degrees celsius). 2. Let the pumpkin cool down. 3. Mix the pumpkin with the rest of the Ingredients for the mousse. 4. Thanks @organicburst for the high quality ceylon cinnamon powder that made this cake taste kind of like Christmas – I am already preparing 🎅🏻 As many of you probably know, cinnamon is my one go to spice in almost everything. Cinnamon is not only delicious but got amazing benefits too: 🌱 Supports a healthy heart 🌱 Helps improving memory 🌱 Healthy immune system 🌱 Regulates blood sugar . . . . Music: @joakimkarudmusic For the crust 200g gluten-free oat flour 8 fresh dates (112g) 110g sweet potato puree (just boil and mix approximately 1 sweet potato) 90g almond milk 1 tsp ceylon cinnamon powder from @organicburst ½ tsp salt 1 tsp vanilla extract . . For the frosting 250g raw cashews 100g maple syrup 1 tsp vanilla extract ½ tsp salt 250ml coconut milk (thick part of a can) . Instructions 1. Blend together the fresh dates, sweet potato puree, almond milk, cinnamon powder and salt in a blender. 2. Add the gluten-free oat flour and mix again until combined. 3. Pour the batter in a cake pan. Keep in the refridge while making the frosting. 4. Boil the cashews for 20 minutes (or soak for at least 4 hours before making the frosting) 5. Pour the cashews in a highspeed blender together with the coconut milk (thick part of a can), maple syrup, vanilla extract and salt. Mix until smooth. 6. FOR THE SALAD 60 g red cabbage 30 g kale 60 g carrots FOR THE SAUCE 30 g peanut butter 35 g maple syrup 1/4 tsp salt 1/2 tsp salt 1/2 tsp sambal olek 1 tsp lime juice 4 g fresh coriander 2 tbsp water . . FOR THE CHILI PINEAPPLE 100 g pineapple 1/2 tsp sambal olek FOR SERVING 200 g tofu 1/2 tbsp coconut oil Salt Coriander 1/2 avocado Brown rice . . 1. Start with cooking the rice. 2. Make the sauce by cutting the coriander and then blending it with the rest of the ingredients in a bowl. 3. Fry the tofu in coconut oil and some salt. 4. Cut the vegetables for the salad. Try to cut the cabbage and carrot very thin. Add the sauce to the veggies and stir around. Save some of the sauce for later. 5. In another bowl, add the pineapple and sambal olek and blend together. 6. Serve the salad, tofu, pineapple salad on a big plate. 7. For the base 72g oat flour 40g peanut butter 40g agave syrup (or maple) 1/4 tsp salt 40g almond milk (add more if too dry) . . For the chocolate 45g peanut butter 1 tbsp agave syrup (or maple) 1/4 tsp salt 1 tbsp cacao powder 40g almond milk . . Steps 1. Blend all the Ingredients for the base layer in a food processor (or use your hands). 2. Shape small cups and let it set in the freezer while making the chocolate filling. 3. Add all of te Ingredients for the chocolate layer in a small bowl and blend together. Heat up in the microwave for 30 seconds. 4. Cajun Lentil Stew (makes 4 servings) 1 garlic glove 0.5 cup leek 100g arugula 1/2 cup coconut milk 3 carrots 4 beetroot (yellow) 100g cauliflower 230g green lentils 400g passed tomatoes 1 tbsp cumin 1 tsp ginger extract salt & peppar 1/3 tsp cayenne 1/2 tbsp cajun powder 1. Chop the carrots, cauliflower, beetroot and boil until it softens. 2. In a pan, fry the leek & garlic. Add the ginger extract, cayenne and cumin. 3. Add the lentils, tomato sauce, beetroot, carrots, cauliflower, coconut milk and cajun. 4. Taste with salt and peppar. Let it simmer for 15 minutes. Add some fresh arugula. 5. Serve with basmati rice. Fluffy vegan pancakes 🥞 For a long time, I have made my regular oat pancakes (pretty good too) but I needed to try something new. I wanted a fluffier and lighther version of pancakes - like the American pancakes 🇺🇸 For the recipe I just replaced the oat flour with some gluten-free plain flour. Turned out pretty good! Hope you'll enjoy if you try 😘 . . For the pancakes (makes 2 servings) 60g banana 🍌 1 cup almond milk 1.5 cup gluten-free plain flour 1 tsp baking powder 1 flaxegg (1 tbsp flaxseeds + 2 tbsp water) 1/2 tsp cinnamon 1/3 tsp salt . . Do this: 1. Start with soaking the flaxseeds in water. Let it set for about 10 minutes. 2. Mash the banana in a bowl (I use a fork for this) 3. In another bowl, add the dry ingredients and blend together. Add the mashed banana and almond milk. Whip together. 4. Fry on medium heat in some coconut oil. Serve with peanut butter, raspberry jam and some maple syrup ✨ . . . . . #milkfree
